To unassign a Donation from a Batch:

Go to Stewardship > Batches and open the Batch record that contains the Donations you wish to remove.

On the Donations sub-page, select the Donation records you wish to remove.

Use the Xfer button and select to transfer the selection to the Donations page.

Use the Assign tool to set the Batch field to blank (by checking the Set to Blank box on the right side of the Assign screen) on the selection of Donations.
You can revisit the Batch record to confirm the selected Donations no longer display on that batch.
An alternative approach is to select the Batch record on the Batches page in MinistryPlatform and delete that record. Deleting a batch in this manner leaves the Donations in the system unassigned.
